Sprinkle the agar agar into the cool liquid and soak the gelatine in cold water. Heat the agar agar to the boil, remove from the heat and stir in the soaked gelatine.
Strain the jelly mixture into a jug and pour it onto a lightly greased, shallow surface to a thickness of a couple of millimetres (1/8 in).
Leave the jelly to set in the refrigerator for at least 30 minutes. Use a small sharp knife to cut the jelly into the desired shape. Gently lift the jelly using a small palette knife.
