This is the traditional method for making pasta without a food processor.
Sift the flour and salt onto a work surface. Make a large well in the centre with your hand and add the eggs or egg yolks, and olive oil.
Using your fingertips, gradually incorporate the flour into the wet ingredients.
With a pastry scraper or by hand, keep bringing the flour into the centre, forming a dough. Knead for 10 minutes, or until smooth and elastic Divide into pieces as specified in the recipe. Cover with plastic wrap.
