Before flipping the tortilla over, always check that no bits of the omelet are stuck to the skillet; that way, the omelet will come out in one piece. Wearing oven mitts, place the rimless plate over the skillet, holding it firmly with your left hand (if you are right-handed). With your other hand, grab the skillet handle and invert the tortilla onto the plate in a quick steady motion. Bits of tortilla stuck to the skillet? Remove them and tuck them into the top of the tortilla while it’s still on the plate. To cook the other side, slide the tortilla back into the skillet, shaking it to straighten the tortilla out in its pretty round shape and tucking the edges under with a spatula.
