Tortillas de patatas are excellent made with only potatoes and eggs. They’re even better when you add onions. Beyond that, you can flavor the tortilla with just about anything. Some ingredients to try:

Diced chorizo or ham
Strips of roasted or fried red bell peppers
Peas, cooked artichokes, or sliced cooked asparagus
Cooked wild mushrooms
Truffle shavings

Of course, tortillas don’t always include a potato filling. They can be made with a single vegetable or a combination or with such ingredients as salt cod and peppers. The Spanish tortilla, you see, is one of the world’s most versatile dishes.
