Traditionally, red onions or shallots are used in kay wot, but feel free to use whatever you have on hand. To help the onions break down into the kulet, they should be very finely minced. Using a food processor is an easy way to do this while also saving precious time and tears. Just be sure to decrease the amount of onion each recipe calls for by a smidge, as the amounts specified in the recipes are based on hand-minced onion: 1 medium onion, minced by hand = 2 cups; 1 medium onion, machine processed = 1½ cups.
