A shirred egg is like a baked egg only the shirred egg is started on top of the stove and finished in the oven, and the baked egg is cooked completely in the oven. For shirred eggs, butter a flameproof pan and heat it over low heat, add the egg or eggs, and cook just until the white is set. Transfer the pan to the broiler or a 450°F oven, and broil or bake to set the top. We like to top shirred eggs with our own pesto mixed with a chopped plum tomato just before broiling or baking.
