Once or twice a year every cottager ought to kill his pig. If a pig is washed and kept clean, it softens the skin and allows it to expand; in fact, a pig thus treated comes much quicker round; it is proved that a pig at fourteen months, kept clean, is equal to one at eighteen which is not attended to. The same day some of the liver may be fried, but the rest can be used in the pan as follows:—
