How to... Prepare Dried Mushrooms

The flavour of some mushrooms intensifies when dried, so mushrooms such as shiitake (also called Chinese black mushroom) and Italian porcini (cep) are often bought dried, then reconstituted.
Soak in hot water for 30 minutes, or simmer with a little sugar for 15 minutes. Drain and squeeze out the water. Cut off the stems and chop the caps. The soaking water will be flavourful, so strain it and add to stock or a sauce. Dried mushrooms reconstitute up to six or eight times their original weight.
