My ex-boss, who is Korean, once told me that the Chinese have a way of preparing really delectable pork dishes with scrumptious flavors without the presence of that distinctly “porky” smell. Whenever we traveled to China, she would always order the pork dishes, and she always relished her choice.

Pork is loved by the Chinese people. It’s widely consumed and used abundantly in everyday cooking: from soups to stir-fries, roasting to braising, dim sum to dumplings. Without a doubt the Chinese make some of the best pork dishes in the world.
