Sponge Cake

When my girls were little, they thought I was Buddy Valastro from the TV show Cake Boss and I was expected to make the most extravagant novelty cakes that always left me with kilograms of sponge cake off cuts. The nearly life-size giraffe cake was probably what got me developing recipes with leftover sponge cake as well as developing a few desserts and children’s birthday cakes that required less time and skill than what us mom’s usually have.
