My friend Jennifer called me the other day because she was stumped. Her husband was coming home with a new client in an hour and she had no idea what to do with the package of chicken staring back at her on her kitchen counter (with a baby on her hip, no less). If you’re like most of my friends, you’re always looking for new ways to cook chicken and it seems like there are no new ideas. Well, not anymore! Welcome to the wonderful world of Thai chicken. Thai people do wonderful things with chicken and it’s no wonder as chickens are part of everyday life for many Thai people in villages or small towns where chickens roam free much like cats do in Greece.
