Rice is always (see “Rice with Everything,”). But noodles—our pancit—are a necessity, too, and you can’t have a proper feast without both, if not multiple versions of each. There’s no real hierarchy of dishes in Filipino cooking, so don’t think of these as sides or mains, but part of the pageantry. They make the table complete.
