It was fascinating to watch this beekeeper at work in the countryside outside Beijing.

Despite its widespread availability, chicken is often a celebratory dish in China. However, unlike in the West, in China every bit of the bird is eaten, including the innards, neck and feet. The bird is cooked and served either whole or in pieces and either way it is not neatly dissected, but chopped up through the bone, using a large cleaver. The Chinese are expert in separating meat from bone in their mouths.
