Pork is enormously popular in China and the many recipes for it range from simple, everyday dishes to more elaborate ones for celebrations.
The Chinese also like the fatty cuts of pork that we in the West disparage, but this is because their methods of cooking – simmering, slow cooking and braising – infuse the fat with the flavours of the dish and render it to a smooth and succulent texture.
