New England, the group of Eastern states that formed the Federal Union – with New York, Pennsylvania and Virginia – in the days when the American flag had only thirteen stars, has given us many great dishes.
The Irish cooks of the great New England first families whose fortunes came from the four-masted sailing ships which plied the seven seas prided themselves on their plain, good, substantial and nourishing fare. And this love of hearty food, with no frills or furbelows, has come down to us to this very day.
