In the 21st century vegetables have gained new-found respect as fundamental to our health, and also the health of the planet.

Slowly, around the world, there has been a reversal of the ingredient hierarchy, with meat-free menus becoming the new normal, alongside a genuine celebration of all things vegetable and what these dishes can bring to the table.
As someone who has grown up with vegetables, deeply ingrained in both the dishes I ate as a small boy and that I now cook as a chef, I find it interesting to watch this cultural shift. I am excited by it and also fascinated. Vegetables have always been a dietary mainstay across the subcontinent, out of both necessity and choice. They demonstrate the diversity of this region’s cuisine, as well as the amazing range of vegetables available, and prove beyond doubt that flesh need not always be the main event.
