As we both eat differently when it comes to oil, we put a lot of thought into whether or not to include it in the recipes in this book. And we decided . . . not to decide. We did both! As we mentioned in Chapter 1, every recipe in this book, if not oil-free as is, includes an oil-free cooking option.

To make the oil-free version of any dish that includes oil, note the “OF” substitution next to oil in the ingredient list of that recipe. In some cases it will simply say “OF: omit,” and in these cases you can just proceed with the recipe as written, omitting the oil when it’s mentioned in the recipe instructions. In other cases, we’ll call for the oil to be replaced with water, broth, nut butter, or another substitute ingredient, and when we do, we’ll let you know what amount to use if it’s different from the amount of oil called for, and provide any specific instructions that are required as the recipe proceeds.
