July 4th. Independence Day. More Americans will fire up their grills on this day than on any other day of the year. And the dish they’re most likely to grill is a culinary icon, not to mention one of America’s favorite foods: the hamburger. No surprise here, but what you may not realize is just how many grill cultures around Planet Barbecue are obsessed by grilled ground meat.

In the burger family alone, you find köftesi (a grilled ground beef and onion patty) served at a century-old restaurant in the shadow of the Hagia Sophia in Istanbul, Turkey. Or bifteki, a grilled ground beef and veal patty popular on Santorini and elsewhere in Greece. Or pljeskavica, a Balkan garlic- and chile-spiked grilled meat patty that has the distinction of being the largest burger on Planet Barbecue.
