Back in 2017 we had to close the restaurant for a week to install a new kitchen, so we asked Shaun to go on a pretty special trip. Almost every working day for the previous six years, he had spoken to a man in Cornwall whom he’d never met. That was about to change.

Dylan Bean is a proud son of Cornwall, so much so that he named his fish business after the county’s ancient name. The ‘sashimi’ part had more to do with his Japanese wife Mutsuko (whom he met in Alaska) and the fact that such was the quality of their fish, their initial customer list was dominated by Japanese restaurants. Thankfully for us, one of the non-Japanese restaurants Dylan worked with was Shaun’s previous employer, and they soon got to know each other over the phone as Shaun became fascinated by the quality of fish arriving from Kernow each day.
