Paulina Byrne has been baking since 2007 and first set up Sponge and Cream as a stall outside the former Brixton Village sweet shop in 2011. She had previously spent several years refining her talents at the Hummingbird Bakery in London and creating her own unique style. Each cake she bakes has its own carefully matched flour, all the flavourings come from real fruit and vegetables and she has no relationship with margarine.

Her favourite might be the banana cake, but it depends what day you ask as she loves them all. Cakes are her passion. She has loved baking since she was a teenager and, when she left IT in search of a job she wouldn’t complain about, it was the natural option to start making cakes.
