The fishermen know that the sea is dangerous and the storm terrible, but they have never found these dangers sufficient reason for remaining ashore.
I get my oysters from Guernsey Sea Farms. They’ve got a flooded quarry in Guernsey, they control the seawater coming in and out and they’ve got good bio security - they’re miles from anywhere so you’re reducing the risks of diseases from France or Ireland. They feed the tiny oysters an algae - when you see it, it’s bizarre, they’ve got these huge vats of brown soup and it’s specific algae that the oysters will do well on before they move on to bigger plankton. Then they get flown up and I pick them up in Inverness Airport.
