GAME CAN BE A FINE THING. THE ONLY PROBLEM IS BUYING THE STUFF. High street retailers, with a few exceptions, are a bit conservative, because most customers just don’t know what to do with game once they get it home. The rules for game birds are similar to those for poultry, but, generally, less cooking time is needed as game birds vary in size. The preferred way is to keep feathered and furred game pink, unless you are braising, as otherwise you may well be wasting your time and money. Try to buy fresh game; you risk losing all the blood on defrosting frozen game.
