All those years ago, when I was reading countless cookbooks as an apprentice holed up in one of the guest rooms at my uncle’s country inn, it never occurred to me that one day I would be writing my own. While there were several key people directly involved in helping me put this book together, I want to first acknowledge those whose contributions were invaluable even before I became a chef.

My mother, Gabrielle. If it weren’t for you, passing down your love of cooking and enjoying great food, this book would not exist. Every traditional recipe in these pages is a dish you cooked or we made together more times than I can count. You gave me a rare gift, one that I prize more than ever. You encouraged me to pursue my culinary dreams when everyone else tried to dissuade me. Thank you for your unconditional love and affection.
