Typical of Malay Nonya and Indonesian cooking, this paste is used as a marinade and flavour booster for meat, poultry or seafood, which can then be threaded on satay sticks and barbecued or grilled. The flavours are redolent of the street carts whose vendors ply these delicacies throughout much of South-East Asia. As a snack, satay has universal appeal. For best results cook over glowing charcoal embers. Satay spice faste can just as easily be used in other quick-cooking applications such as stir-frying, deep-frying or pan-frying.
