Catering without fluster for larger numbers of people throws up special problems, but none that can’t be solved with a bit of advance planning. For a start, do you have enough plates, cutlery, and glasses? If you can’t borrow the extras, you’ll have to buy paper plates and plastic cutlery, so add them to your shopping list. When you’re planning what to cook, check that you have enough pans of the right size.
Next: the food. Above all don’t be over-ambitious: remember that the main point of the event is to get together and enjoy each other’s company. Many of the recipes in this book can be made in greater volume, and in this chapter, you’ll find more ideas for generous feasting.
