Next to sweets, the foods dearest to any Trinidadian’s heart are hot pickles, pepper sauces, and seasoning mixes that are a part of every meal, either as a condiment or as flavoring for the pot. Today, most of these mixtures can be readily purchased pre-made from the local market or supermarket or online, but many families still make their own, or have at least one relative or friend who will prepare the mixtures for them. Making seasoning sauces and the like is not a once-a-year affair. Rather, these mixtures are made year-round as the need arises.
