You need only glance at a map to discover why Thailand has so many wonderful fish and shellfish dishes. The country has a long coastline, most of it on the fishrich Gulf of Siam, and major rivers provide a wide variety of fresh water fish. Prawns and shrimp are very popular, not just fresh, but also dried. If you’ve never had a fish curry, do try one of the ones in this chapter. The citrus flavours that are such a feature of Thai curries work very well with fish and shellfish.
