To judge from the quantity of bison bones found near the fire pits of prehistoric cave dwellers, beef was man’s first barbecue. To this day, the popularity of beef remains universal—not to mention at an all-time high. After all, nothing matches the primeval pleasure of sanguine, smokily charred, perfectly cooked beef.

“Carve the bone completely out of the steak with a sharp knife and hide it for yourself.”

James Beard

Beef is some of the best food the barbecue trail has to offer, whether you’re a Korean enjoying bool kogi (sesame-grilled beef), a Russian savoring shashlik (kebabs), or a Texan cutting into an oversize steak. What you may not realize is just how widespread and passionate the world’s beef eaters are or how astonishingly diverse are the ways to cook beef with live fire.
