The Aztecs and Incas believed that amaranth and quinoa were foods of the gods and were highly praised. These grains, along with barley, millet, spelt, buckwheat and freekah, amongst others, have been around for thousands of years and have remained mostly unchanged, therefore giving them the title of ancient grains.
Many grains are gluten free and extremely versatile. You can play around with the combination of grains in all the grain bowls that are paired with various ingredients in this chapter to create meals that are not only tasty, but comforting too. Quinoa, buckwheat, millet and amaranth are all gluten-free grain options, whilst spelt is wheat-based.
