Gujarat, on the western coast of India, is a primarily vegetarian state, although some communities do still include seafood, chicken, eggs and mutton in their diets. This might seem surprising given their easy access to plentiful seafood along the coast, but the hot, dry climate, agrarian nature of their farming, and predominance of the Vaishnava sect of the Hindu religion means that vegetarianism became ingrained in the culture.

A typical Gujarati thali consists of roti, dal or curry, rice and shaak (a dish made up of several different combinations of vegetables and spices, which may be either spicy or sweet). The use of sugar or jaggery in meals is widespread and you will find that many Gujarati dishes are distinctively sweet, salty and spicy all at once, though with differing levels of heat.
