Peel and chop the carrots into small dice and place in a vacuum bag with the carrot juice, sugar and salt. Seal the bag and steam at 90°C for 45 minutes until the carrots are very soft.
Empty the contents of the bag into a Thermomix or high-powered blender with the xanthan gum, and blend until smooth. Check the seasoning — it should be sweet so adjust if need be with a little more sugar
