Name: Make your Own Korean-Style Feast

Ingredients: 1 apple, peeled, cored and grated; 1 celeriac (celery root), peeled and grated; 1 bunch of spring onions (scallions), finely sliced; 1 packet of nori sheets (you’ll need at least 10 sheets); salt and pepper, to taste; short-grain steamed rice, cooked according to packet instructions; baby gem lettuce leaves; 20 g (¾ oz) chives, snipped; 2–3 tablespoons plant mayonnaise; Japanese pickles; pickled ginger; juice of 1 lemon (pour this over the apple once grated to stop it going brown); kimchi; 1 big cauliflower head (leaves and all); 4 tablespoons sesame seeds, black or white; 1 tablespoon maple syrup; 2 tablespoons olive oil; 2 tablespoons gochujang paste (found in any Asian supermarket)

I have been to South Korea on a number of occasions over the last 10 years and it is still one of my favourite cuisines. Korean cuisine traditionally consists of many smaller dishes that balance each other out. Spicy, salty, sweet and sour are all elements of a great meal. I have taken inspiration and flavours from my travels when putting this feast together.
