Eggs Benedict are said to have been created by a New York chef as a restorative for a Mr Benedict’s ‘morning after’! They are very good for lunch or brunch, that combination of breakfast and lunch that is so popular on Sundays in America. The Americans invented a muffin which they called an ‘English muffin’ and the muffins now available here are very similar. They provide the perfect base for the ham and poached eggs covered in hollandaise sauce – a wonderful combination.</
