Zucchini Hot Dish

  • 1 lb. ground beef
  • 1 small onion, chopped, optional
  • salt and pepper to taste
  • 4–5 6-inch-long zucchini, sliced
  • 10¾-oz. can cream of mushroom soup
  • 1–2 cups shredded cheddar cheese

Ideal Slow Cooker Size: 1½-Quart


  1. Brown ground beef with onions, if you wish, along with salt and pepper in a nonstick skillet until crumbly. Drain.
  2. Layer zucchini and beef mixture alternately in slow cooker.
  3. Top with soup. Sprinkle with cheese.
  4. Cover and cook on Low 2–3 hours, or until the zucchini is done to your liking.
