Ingredients

  • 4 onions, coarsely chopped
  • 2 tbsp. vegetable oil
  • 2 cloves

Method

  1. Sauté the onions in oil for 10 minutes. Stir in garlic, gingerroot, and spices. Continue to sauté, stirring constantly for about 3 minutes.
  2. Transfer to slow cooker. Add zucchini, water, green beans, apples, red bell pepper, and dried apricots.
  3. Cover. Cook on High 5–6 hours, or on Low 10–12 hours.
  4. Stir in raisins and apricot conserve just bef
