Place the vegetables in a bowl and toss with the salt. Pour water over them to submerge fully, cover with a kitchen towel or plastic wrap, and let sit overnight on the counter. The next day, drain and rinse the vegetables. Evenly distribute them into sterilized containers and tuck in the garlic and aromatics.
