I love limes, but unless I am in the tropics, they feel very specifically summer, so I craft my gin and tonics around lemons. And when I say lemons, I really mean it: I double the peel in this drink and give it a solid squeeze of lemon juice, too. Look for a London Dry–style gin—here in Seattle, I like our local Kur.

Ingredients

  • 2 wide strips lemon peel
  • ounces (45 ml) London Dry–style gin

Method

In a rocks glass, place one strip of lemon peel. Fill the glass with your best ice. Place the second lemon peel atop the ice, then pour in the gin, followed by the tonic. Finish with a solid squeeze of lemon juice.
