This is the dish most often associated with Apulia, the region of Italy where the spur and the heel of the boot are. Factory-made orecchiette can be very good and are fairly easily available. Broccoli rabe (sometimes called rapini) with olive oil, garlic, and anchovies is the classic sauce served with orecchiette. The broccoli rabe is cooked with the pasta, which absorbs some of the its flavor.
