Maftoul is the Palestinian couscous. In the Italian kitchen it is known as fregola, in North America it is called Israeli couscous, and in Israel it goes by ptitim. Essentially, these are baked pasta pearls and as such cook very quickly, yet they also retain their shape and texture when slow-cooked. Maftoul can be served as a side or a main dish.
