At Abu Hassan, the legendary hummus eatery near the port of Jaffa, lore has it that a customer once ordered a “meshulash” (triangle in Hebrew), a combination of the three dips they make – hummus with tahini, hummus with whole chickpeas, and hummus with fava beans. The meshulash became so popular that the owners put it on the menu, and it went on to become their signature dish.
