These eggplant slices are crispy on the outside and creamy on the inside. Slice the eggplant lengthwise to disperse the concentration of the seeds across each slice.

When choosing an eggplant, look for one with firm flesh, a deep black-purple color, and taut, shiny skin. If the eggplant feels light in your hand, that means it doesn’t have too many seeds, which is good. The fewer the seeds, the better the eggplant.
