In Arab kitchens across the Levant, pita bread is commonly baked on a saj, a domed griddle that is the closest thing to having a taboon oven at home. It turns out a wok can be used as an improvised saj: Turn a wok upside down and place it over the largest flame on your stove, heat it until it is extremely hot, place the thinly rolled-out dough carefully on top, and watch the magic happen.
