Method

Select mangoes as described under green mango preserve. Pare and pass through a shredder, using the medium disc (use a grater in the absence of a shredder). Soak for 2 to 3 hours in lime water sufficient to cover them. Wash and boil in the alum water till tender. Remove from the alum water and wash in 2 to 3 changes of hot water in order to el
