Selection of fruit:—Select mangoes as described under the green mango preserve.
Pare and slice the green fruit; boil them in water just sufficient to cover, until they soften. Pass through a coarse sieve and add to the pulp 1¼ times its weight of the sugar. If however the mangoes are very sour, add sugar 1½ times the weight of the pulp. Boil the mixture, stirring constantly till it thickens (222° F). Remove from the fire, add lime juice and the colouring.
