Make this fabulous fruit sauce using any berries in season. Ideal for serving with any dessert, ice cream or sorbet.

  • 250 g (8 oz) firm ripe raspberries

Method

  1. Prepare the fruit by picking over and removing any bruised or overripe fruit.
  2. Combine the raspberries in a medium saucepan with the caster sugar and lemon juice and bring to the boil to soften the berries slightly. Remove from the heat and allow to cool.
