One of the best cooking secrets my grandfather taught me was to marinate chicken breasts in yogurt. The enzymes in the yogurt tenderize the meat. These skewers are common street food in Macedonia and we often had them at family barbecues. You will need 8 to 10 metal or pre-soaked bamboo skewers (soak bamboo skewers for 20 minutes).

Ingredients

  • 2 lb (900 g) boneless skinless chicken thighs (about 4), cut into 1-inch (2.5 cm) cubes

Method

In a large bowl, combine the chicken, yogurt, salt, olive oil, and mint. Mix to coat. Cover and refrigerate for at least 2 hours and up to 24 hours to marinate.

Skewer 2 to 3 pieces of chicken towards the top end of each skewer.

Heat a grill pan or grill to medium-high heat. Grill the chicken skewers for 4 to 5 minutes on each side until golden brown and fully cooked.
