These were one of the first things I wanted to eat when we traveled to my parents’ villages—my father is from Rula and my mother is from Bresnitza. These mini doughnuts are made with a choux pastry, or pâte à choux dough. They are found in nearly every bakery in Macedonia. A pastry bag with a star-shaped tip gives the Tulumbi their unmistakable shape. Freshly fried, they are soaked in a flavorful syrup and are best served right away.
