Preserves are a very important element of the Macedonian table, and in Macedonia’s past, a key part of survival. In the villages of Macedonia, storing food for the winter months was a communal family effort. Even during my childhood in Toronto, my family would get together every fall and spend a weekend working to preserve the fruits and vegetables grown over the summer. We used preservation techniques that were passed down through generations, and took pride in not being wasteful.

Homemade jams, eaten with breads and tea, are a popular Macedonian breakfast. Pickled vegetables are typically enjoyed in the evenings, with a glass of rakija (fruit brandy). Dried fruits and vegetables are common snacks or incorporated into recipes. Homemade yogurt is a staple as well, and my parents would make it once a week.
