THE RECIPE Mille-feuille, also known as a Napoleon, is one of the best-known pastries made using puff pastry. Its alternating layers of vanilla diplomat cream and flaky pastry make for a rich dessert that plays with flavors and textures.

  1. Preheat oven to 375°F. Roll prepared dough into a 12-by-8-inch rectangle. Pierce many holes in dough with a fork or toothpick to let steam escape during baking. (This is called docking the dough.) Transfer to a parchment paper–lined baking sheet.
