This is one of our best-selling seasonal dishes. Everybody loves the crispy duck egg and its runny yolk that creates a fantastic sauce. English asparagus is one of our most treasured seasonal ingredients that can’t be matched by anything imported.

We use about 80 bunches a week when it’s in season, from the end of April to the middle of June, and it doesn’t appear on our menu at any other time of year. They are all supplied by Richard and Ronda Morritt
